Tomato Soup 3 x 400g tins plum tomatos 3 medium onions chopped 1 clove peeled and crushed garlic 1.5 chicken stock cubes in 200ml/7floz hot water 1 tbsp sweetener Place sieve over bowl and pour tomatoes into sieve, using a wooden spoon make sure all the liquid is passed through the sieve. Place stock, onions and garlic into a large saucepan. Bring to the boil then turn down the heat, cover and simmer for fifteen minutes until soft. Remove lid and allow juices to reduce till thick and syrupy. Add tomatoes and simmer uncovered for a further fifteen minutes. Allow to cool a little then add the sweetener. Use blender to puree the soup before serving with garlic bread or croutons. |

Kebabs 1lb Pork Fillet 1 onion, 1 Red Pepper, 4 large Tomatoes tbspn mustard, 2 tbspn olive oil Mix olive oil and mustard together. Slice pork, onion, red pepper and tomatoes. Coat pork with mustard and oil marinade. Alternately, arrange pieces of pork, onion, tomato and red pepper on skewers. Place skewers under grill and cook until pieces are brown round the edges. Serve with salad or on bed of rice.
