BAKED MEAT LOAF CHERRY ALMOND CAKE STARRY MINCE PIES
Meat Loaf
Cherry Almond Cake
Starry Mince Pies

1 lb Minced Meat (made up with minced beef, sausagemeat and bacon
1 Onion – finely chopped
1 level tspn dried mixed herbs
1 Oz white breadcrumbs
1 tblsp Tomato Puree or Ketchup
1 tspn Mixed Spice
1 Egg
Gas Mk 4

8 oz Soft Margarine
8 oz Caster Sugar
4 large Eggs
8 oz Plain Flour
1 level tspn Baking Powder
6 oz Glace Cherries – washed dried and cut into halves - saving a few for the top of the cake
1 oz Ground Almonds
1 oz Flaked Almonds – saving a few for the top of the cake
2-3 drops Almond Essence
10 oz Sultanas
A greased and lined 8” round cake tin
Gas Mk 2 300F

5 Oz Plain Flour
2 Oz Ground Almonds
4 Oz Butter
Grated zest if 1 Orange
400 gm jar Mincemeat
Icing sugar for dusting
12 hole bun tray
Plain round cutter
Star cutter
Gas Mk 6 200C
Mix all ingredients together and press into a greased and baselined 2lb loaf tin. Cover with foil and and bake for 1.5 – 2 hrs. Sieve together flour and baking powder. Place all ingredients in a large mixing bowl and beat thoroughly until well mixed. Put into the prepared tin and scatter the reserved cherries and almonds over the top. Bake in preheated oven for about 2.5 – 3 hrs until a skewer inserted in the middle comes out clear. Leave in the tin for 15 mins then turn out and cool on a wire tray.

Place flour, almonds, butter, orange zest in a mixing bowl and mix till it resembles breadcrumbs then add about 3 tblsps of cold water and mix to make dough. Roll out on a lightly floured surface to the thickness of a 2p. Cut out rounds and put into the greased bun tray. Fill each with a heaped tspn of mincemeat and top with a cut out star. Bake for about 20 mins till golden in colour. Cool on a wire tray and dust with icing sugar when cool.
